It’s easy to replace lettuce with microgreens. Microgreens are more nutritious than lettuce and when combining a few different types it changes a regular salad to a flavor packed salad. We combined pea, broccoli, radish and sunflower microgreens for our side salad this weekend.

Breakfast of Champions!

I’ve never really been a cereal for breakfast kind of girl. This is my favorite breakfast. Top Ramen with broccoli florets, and whatever protein is in the fridge. Once cooked drain 3/4 of the water and add 1/2 the flavor packet along with some lime juice. When you’re ready to eat add a large handful of microgreens and mix all together. It’s delicious and I like that I’m starting my day with veggies and greens.

Pumpkin Soup

We grow pumpkins on the farm.  I always use them as decoration for the fall season, and then turn them in to pumpkin puree.  This year I made pumpkin soup and added microgreens. The microgreens added a complexity to the soup that changed the entire flavor.  We will be making it again.
